  1. 1. Preheat the oven to 180 degrees Celsius. Wash the vegetables and slice the aubergine, zucchini, and bell pepper into approx. 3 mm thick slices.
  2. 2. Finely chop the garlic cloves. Mix them in a small bowl with the olive oil, the juice of half the lemon, the chopped mint, salt, and pepper.
  3. 3. Layer the vegetable slices in a small baking dish in a circular or diagonal stack so they touch slightly. Place some of the garlic-oil mixture between the layers.
  4. 4. Pour the remaining garlic-oil mixture evenly over the top of the vegetable stack.
  5. 5. Cover the dish with aluminum foil and bake the Tian for 30 minutes in the oven.
  6. 6. Remove the aluminum foil and bake the Tian for another 15 minutes until the edges are slightly brown. Let it rest for 5 minutes before serving.
