🍆 Sunflower-Garlic Tian with Fresh Mint

Ingredients
- 1 Stk Aubergine
- 1 Stk Zucchini
- 1 Stk red bell pepper
- 6 Stk garlic cloves
- 2 Esslöffel fresh mint
- 4 Esslöffel olive oil
- 1/2 Stk lemon
- 1 Prise salt
- 1 Prise black pepper
Instructions
- 1. Preheat the oven to 180 degrees Celsius. Wash the vegetables and slice the aubergine, zucchini, and bell pepper into approx. 3 mm thick slices.
- 2. Finely chop the garlic cloves. Mix them in a small bowl with the olive oil, the juice of half the lemon, the chopped mint, salt, and pepper.
- 3. Layer the vegetable slices in a small baking dish in a circular or diagonal stack so they touch slightly. Place some of the garlic-oil mixture between the layers.
- 4. Pour the remaining garlic-oil mixture evenly over the top of the vegetable stack.
- 5. Cover the dish with aluminum foil and bake the Tian for 30 minutes in the oven.
- 6. Remove the aluminum foil and bake the Tian for another 15 minutes until the edges are slightly brown. Let it rest for 5 minutes before serving.
