🍋 Creamy Rice Balls with Lemon

Ingredients
- 50 g sugar (coarse)
- 60 ml water
- 150 g risotto rice (short-grain)
- 400 ml milk (whole)
- 1 Stück lemon zest (grated)
- 10 ml lemon juice
Instructions
- 1. Caramelize the sugar with the water in a pan over medium heat until golden brown.
- 2. Remove the pan from the heat and immediately add the rice and milk. Stir well.
- 3. Cook the rice cream over low heat stirring constantly for about 15 minutes until thick.
- 4. Remove the cream from the heat, stir in the lemon zest and juice, and let it cool slightly.
- 5. Form small balls from the cream using a spoon and carefully roll them in coarse sugar.
- 6. Serve the balls warm or at room temperature.
