  2. 2. Remove the pan from the heat and immediately add the rice and milk. Stir well.
  3. 3. Cook the rice cream over low heat stirring constantly for about 15 minutes until thick.
  4. 4. Remove the cream from the heat, stir in the lemon zest and juice, and let it cool slightly.
  5. 5. Form small balls from the cream using a spoon and carefully roll them in coarse sugar.
  6. 6. Serve the balls warm or at room temperature.
