  1. 1. Take the salt cod out of the package. Wash it thoroughly under cold water to remove excess salt. Cut it into bite-sized cubes.
  2. 2. Wash the beetroot and slice or cube it. Cut the bell pepper and red onion into small pieces as well.
  3. 3. In a large bowl, mix the olive oil, mustard, lemon juice, salt, and pepper.
  4. 4. Add all the vegetables and fish to the bowl. Stir everything gently so the fish does not break apart.
  5. 5. Sprinkle with fresh parsley. Serve chilled as an appetizer.
