🐟 Smoked Cod and Beetroot Salad

Ingredients
- 200 g Salt Cod (Salted Cod)
- 200 g Beetroot (Vacuum Pack)
- 1 Stk Red Bell Pepper
- 3 EL Olive Oil
- 1 Stk Red Onion
- 1 TL Grainy Mustard
- 1 EL Lemon Juice
- 2 EL Parsley (fresh)
Instructions
- 1. Take the salt cod out of the package. Wash it thoroughly under cold water to remove excess salt. Cut it into bite-sized cubes.
- 2. Wash the beetroot and slice or cube it. Cut the bell pepper and red onion into small pieces as well.
- 3. In a large bowl, mix the olive oil, mustard, lemon juice, salt, and pepper.
- 4. Add all the vegetables and fish to the bowl. Stir everything gently so the fish does not break apart.
- 5. Sprinkle with fresh parsley. Serve chilled as an appetizer.
