🥘 Smoked Paprika Chickpea Stew

Ingredients
- 2 x 400 g Chickpeas (can)
- 1 Stück Onion
- 2 Stück Carrots
- 2 Stück Celery stalks
- 2 Stück Bell peppers (red, chopped)
- 400 g Tomatoes (canned, chopped)
- 2 TL Smoked paprika (ground)
- 4 Stück Garlic cloves
- 3 EL Olive oil
- 500 ml Vegetable broth (hot)
- 1 EL Lemon juice
- Nach Belieben Salt and pepper
Instructions
- 1. Rinse the chickpeas and drain them in a sieve.
- 2. Cut onion, carrots, celery, and peppers into approx. 1 cm cubes.
- 3. Heat the olive oil in a large pot. Sauté the vegetables for 5 minutes over medium heat.
- 4. Press the garlic through a press and stir in the smoked paprika. Fry for 1 minute while stirring.
- 5. Add the chickpeas and canned tomatoes (with juice) to the pot. Stir well.
- 6. Pour in the hot vegetable broth. Bring everything to a boil and then simmer on low heat for 10 minutes.
- 7. Season with salt, pepper, and lemon juice. Stir well and serve warm.
