🥩 Simple Veal Saltimbocca

Ingredients
- 4 Stück Veal cutlets
- 4 Scheiben Prosciutto
- 8 Blätter Sage
- 40 g Butter
- 2 EL Olive oil
- 100 ml White wine
Instructions
- 1. Place one slice of prosciutto on each veal cutlet. Place a sage leaf on the prosciutto. Secure each cutlet with a toothpick.
- 2. Heat olive oil and half of the butter in a non-stick pan over medium-high heat.
- 3. Fry the cutlets for 2-3 minutes per side until golden brown and the prosciutto is crispy. Remove them from the pan.
- 4. Pour the white wine into the hot pan and scrape off the brown residue from the bottom (deglaze). Let the sauce reduce briefly.
- 5. Remove the pan from the heat and stir in the remaining cold butter to make the sauce creamy. Return the cutlets and serve immediately.
