  1. 1. Place one slice of prosciutto on each veal cutlet. Place a sage leaf on the prosciutto. Secure each cutlet with a toothpick.
  2. 2. Heat olive oil and half of the butter in a non-stick pan over medium-high heat.
  3. 3. Fry the cutlets for 2-3 minutes per side until golden brown and the prosciutto is crispy. Remove them from the pan.
  4. 4. Pour the white wine into the hot pan and scrape off the brown residue from the bottom (deglaze). Let the sauce reduce briefly.
  5. 5. Remove the pan from the heat and stir in the remaining cold butter to make the sauce creamy. Return the cutlets and serve immediately.
