  2. 2. Roll the cutlets briefly in the flour and shake off excess flour.
  3. 3. Fry the cutlets in a mixture of oil and half the butter over medium heat until golden brown.
  4. 4. Remove the cutlets from the pan and add the remaining butter.
  5. 5. Fry the capers briefly in the melted butter and pour in the lemon juice.
  6. 6. Stir in the warm chicken broth and let the sauce thicken slightly.
  7. 7. Add the parsley to the sauce, return the cutlets to the pan, and serve immediately.
