🍋 Simple Veal Piccata (Cotoletta)

Ingredients
- 4 Stück (je 120 g) Veal cutlets (boneless)
- 50 g White flour
- 60 g Butter
- 50 ml Lemon (juice)
- 100 ml Chicken broth (warm)
- 15 g Capers (drained)
- 30 ml Olive oil
- 4 g Salt
- 10 g Parsley (chopped)
Instructions
- 1. Pound the veal cutlets flat and season both sides with salt.
- 2. Roll the cutlets briefly in the flour and shake off excess flour.
- 3. Fry the cutlets in a mixture of oil and half the butter over medium heat until golden brown.
- 4. Remove the cutlets from the pan and add the remaining butter.
- 5. Fry the capers briefly in the melted butter and pour in the lemon juice.
- 6. Stir in the warm chicken broth and let the sauce thicken slightly.
- 7. Add the parsley to the sauce, return the cutlets to the pan, and serve immediately.
