600 g very fresh tuna fillet (4 slices; sushi quality)

Instructions
1. Squeeze the lime and measure 1 tablespoon of juice. Whisk this juice in a large bowl with chili sauce, sesame oil, rice vinegar, fish sauce, and 2 tablespoons of water.
2. Peel the garlic and ginger. Finely chop the garlic and finely grate the ginger.
3. Wash the chili pepper, cut it in half lengthwise, and remove the seeds. Finely chop the pepper and stir it into the sauce along with the garlic and ginger.
4. Wash the coriander (cilantro), shake off excess water, and pluck the leaves from the stems.
5. Spread the sesame seeds on a flat plate. Rinse the tuna, pat it dry, and season with salt and pepper. Press the tuna slices firmly into the sesame seeds on both sides until fully coated.
6. Cook the noodles according to the package instructions. Meanwhile, heat oil in a non-stick pan and sear the tuna slices for 1 to 2 minutes on each side.
7. Remove the tuna from the pan and cut it into thin strips. Drain the noodles in a colander, toss them with the sauce, and arrange the tuna on top. Garnish with the coriander leaves and serve.
