  1. 1. Preheat the oven to 180 °C.
  2. 2. Rub the meat thoroughly with salt and pepper on all sides.
  3. 3. Chop the onion and garlic roughly and place them in a roasting pan with the carrots.
  4. 4. Place the meat on top of the vegetables and pour beer and broth over it.
  5. 5. Roast for about 2-2.5 hours in the oven, basting regularly with the sauce.
  6. 6. Let the meat rest for 10 minutes before serving.
