  2. 2. Heat a non-stick pan over medium heat and add the butter.
  3. 3. Add the mushrooms to the pan and fry for 2 minutes until soft.
  4. 4. Pour the egg mixture over the mushrooms and stir briefly to form a layer.
  5. 5. Sprinkle the ham and cheese over one half of the egg.
  6. 6. Fold the other half of the egg over the filling, cover the lid, and let it set for 3 minutes.
  7. 7. Remove the omelet from the pan, sprinkle with chives, and serve immediately.
