🍫 Fluffy Chocolate Mousse

Ingredients
- 150 g Dark chocolate couverture
- 3 Eggs (size M)
- 40 g Sugar
- 200 ml Cream (30% fat)
- 1 Prise Salt
Instructions
- 1. Break the chocolate into small pieces and melt it gently in a double boiler or microwave. Let it cool slightly.
- 2. Separate the eggs. Add the egg yolks to the melted chocolate and stir.
- 3. Beat the egg whites with a pinch of salt until stiff peaks form.
- 4. Whip the cold cream until stiff.
- 5. Gently fold in the stiffly beaten egg whites and the whipped cream into the chocolate mixture in stages.
- 6. Fill the mousse into small glasses and place them in the refrigerator for at least 2 hours.
