  1. 1. Roughly chop chocolate and melt in a bowl over a bain-marie. Remove from heat and let cool slightly.
  2. 2. Separate eggs. Stir egg yolks into the melted chocolate.
  3. 3. Whip cream until stiff peaks form.
  4. 4. Whip egg whites with a pinch of salt and sugar until glossy peaks form.
  5. 5. Gently fold whipped cream into the chocolate mixture.
  6. 6. Gently fold in egg whites until no white streaks remain.
  7. 7. Fill mousse into four glasses. Refrigerate for at least 2 hours to set.
