  3. 3. Heat butter and oil in a large pan over medium-high heat.
  4. 4. Sear the chicken strips for 5 minutes until brown. Remove them from the pan.
  5. 5. Sweat the onions in the same pan for 3 minutes until soft.
  6. 6. Reduce heat to low. Stir in mustard and cream into the onions.
  7. 7. Let the sauce simmer gently for 3 minutes until it thickens.
  8. 8. Return the chicken to the pan and mix with the sauce. Season with salt and pepper.
  9. 9. Serve the dish warm.
