  1. 1. Unpack the shrimp and pat them dry with a kitchen towel. Wash the pepper, remove the core and seeds, and cut the vegetable into rough strips.
  2. 2. Heat the olive oil in a large pan over medium heat. Add the shrimp and fry them for two minutes from each side until pink. Remove the shrimp from the pan and place them on a plate.
  3. 3. Put the pepper strips into the same pan and fry them for five minutes until soft. Add the chopped garlic and fry it for another minute until fragrant.
  4. 4. Deglaze the vegetables with the vegetable broth. Let the liquid reduce for two minutes until slightly creamy. Return the shrimp to the pan.
  5. 5. Season the dish with salt. Taste and serve immediately with fresh chopped coriander.
