🌾 Chorizo & Spinach Grain Bowl

Ingredients
- 200 g Chorizo sausage
- 400 g Chickpeas (from can)
- 150 g Basmati rice
- 150 g Fresh spinach
- 200 g Cherry tomatoes
- 2 Stk Garlic cloves
- 1 TL Cumin (ground)
- 1 TL Paprika powder (sweet)
- 2 EL Olive oil
- 1 Prise Salt
- 1 Bund Parsley
Instructions
- 1. Rinse the rice under cold water and cook it according to package instructions.
- 2. Slice the chorizo sausage into thin slices.
- 3. Halve the cherry tomatoes and drain the chickpeas.
- 4. Finely mince the garlic and chop the parsley.
- 5. Fry the chorizo slices in a pan with a little olive oil until golden brown.
- 6. Add the garlic, cumin, and paprika powder to the chorizo and stir for 1 minute.
- 7. Add the chickpeas and cherry tomatoes to the pan and heat everything for 3 minutes.
- 8. Stir the spinach into the pan until it wilts.
- 9. Distribute the rice onto 4 storage containers and place the chorizo mixture on top.
- 10. Garnish with fresh parsley and let the bowls cool down for meal prep.
