4. Peel the grapefruit and the orange with a sharp knife, remove all white pith, and cut out nice fillets along the membranes, catch the released juice, and stir it into the sauerkraut.
5. Use a small melon baller to scoop out balls from the melon and fold them into the sauerkraut.
6. Fry the shrimp in hot butter for 2 minutes on each side, season with the remaining lemon juice, salt, and pepper, and stir in the parsley.
7. Arrange the sauerkraut on a salad plate, decorate it with the orange and grapefruit fillets, and place the shrimp on top.
