🍲 Sambar - South Indian Lentil Stew

Ingredients
- 1 Toor Dal (Split Yellow Lentils)
- 4 Water
- 2 Mixed Vegetables (Carrot, Potato, Eggplant)
- 1 Sambar Powder
- 2 Coriander Leaves
- 1 Mustard Seeds
- 0.5 Turmeric
- 2 Oil
Instructions
- 1. Bring the lentils to a boil in water and cook for 20 minutes.
- 2. Add the vegetables and cook for another 15 minutes.
- 3. Add Sambar powder, turmeric, and salt, and mix well.
- 4. Heat oil in a small pan, add mustard seeds, and let them crackle.
- 5. Pour the tempered oil over the sambar and garnish with coriander.
- 6. Serve the sambar hot with rice or idli.
