  1. 1. Pat the 200 g salmon fillet dry with paper towels. Never wash it, or it will become mushy.
  2. 2. Rub the salmon with 1 tsp salt and 1 tsp pepper. Make sure it’s evenly distributed.
  3. 3. Rinse the 15 g capers under cold water. This removes excess salt.
  4. 4. Drain the capers well in a sieve. Wet capers will water down the dressing.
  5. 5. Peel 1 clove of garlic. Remove any green sprouts inside.
  6. 6. Chop the garlic very finely. Finely chopped garlic doesn’t burn as quickly.
  7. 7. Put the drained capers and chopped garlic into a small bowl.
  8. 8. Pour in the 2 tbsp lemon juice and 2 tbsp olive oil. Stir well.
  9. 9. Preheat the air fryer to 180 °C. This takes about 3 minutes.
  10. 10. Place the salmon fillet in the air fryer basket. Make sure it doesn’t overlap.
  11. 11. Cook the salmon at 180 °C for 10 minutes, until it’s golden brown. The heat penetrates evenly.
  12. 12. Open the basket and carefully flip the fillet. This cooks it on both sides.
  13. 13. Close the basket and cook for another 5 minutes. The salmon will become firm and flaky.
  14. 14. Check for doneness: A knife should slide easily into the fillet. Don’t overcook it!
  15. 15. Remove the salmon and pour the dressing over it. Serve immediately.
