  1. 1. Wash the baby spinach and arugula and dry them well. Dice the onions into fine cubes.
  2. 2. Heat olive oil in a pan and sweat the onions until translucent over medium heat, about 5 minutes. Add the thyme and stir for 1 minute.
  3. 3. Halve the cherry tomatoes and place them in a bowl. Add the spinach, arugula, and the warm onion mixture.
  4. 4. Mix apple cider vinegar, salt, and pepper in a small bowl. Pour the dressing over the salad and gently toss everything.
  5. 5. Serve the salad immediately to keep the green leaves crisp.
