🌿 Provençal Herb Salad Terrine

Ingredients
- 150 g Baby spinach
- 100 g Arugula
- 2 Stück Onions
- 1 Bund Thyme
- 200 g Cherry tomatoes
- 4 EL Olive oil
- 2 EL Apple cider vinegar
- 1 Prise Sea salt
- 1 Prise Black pepper
Instructions
- 1. Wash the baby spinach and arugula and dry them well. Dice the onions into fine cubes.
- 2. Heat olive oil in a pan and sweat the onions until translucent over medium heat, about 5 minutes. Add the thyme and stir for 1 minute.
- 3. Halve the cherry tomatoes and place them in a bowl. Add the spinach, arugula, and the warm onion mixture.
- 4. Mix apple cider vinegar, salt, and pepper in a small bowl. Pour the dressing over the salad and gently toss everything.
- 5. Serve the salad immediately to keep the green leaves crisp.
