  1. 1. Wash the potatoes and boil them in salted water for 15 minutes until tender. Let them cool and cut them into cubes.
  2. 2. Wash the cucumber and celeriac. Peel the celeriac and grate it coarsely. Cut the cucumber into small cubes.
  3. 3. Mix peanut butter, soy sauce, lemon juice, honey, and sesame oil in a bowl to form a smooth sauce.
  4. 4. Combine the potatoes, cucumber, celeriac, and the sauce in a large bowl. Gently fold everything together.
  5. 5. Slice the spring onions into rings and sprinkle them over the salad along with the sesame seeds before serving.
