🥗 Floral Summer Salad with Fresh Goat Cheese Cream

Ingredients
- 150 g Arugula
- 200 g Cherry tomatoes
- 150 g Fresh goat cheese
- 100 g Yogurt (plain, 10% fat)
- 40 g Walnuts
- 20 ml Vinegar (Balsamic or white wine)
- 25 ml Olive oil
- 1 g Salt
- 1 g Black pepper
Instructions
- 1. Wash the arugula and dry it well. Wash the tomatoes and halve them.
- 2. Mix the goat cheese with the yogurt, half of the vinegar, and one-third of the oil to form a smooth cream.
- 3. Toast the walnuts in a dry pan over medium heat for 3 minutes until fragrant. Let them cool and crumble them roughly.
- 4. Mix the remaining vinegar and oil with salt and pepper in a small bowl.
- 5. Fill a large bowl with the arugula and tomatoes. Add the walnuts and drizzle the salad with the dressing mixture.
- 6. Top the salad with small scoops of the goat cheese cream and serve immediately.
