  1. 1. Wash the arugula and dry it well. Wash the tomatoes and halve them.
  2. 2. Mix the goat cheese with the yogurt, half of the vinegar, and one-third of the oil to form a smooth cream.
  3. 3. Toast the walnuts in a dry pan over medium heat for 3 minutes until fragrant. Let them cool and crumble them roughly.
  4. 4. Mix the remaining vinegar and oil with salt and pepper in a small bowl.
  5. 5. Fill a large bowl with the arugula and tomatoes. Add the walnuts and drizzle the salad with the dressing mixture.
  6. 6. Top the salad with small scoops of the goat cheese cream and serve immediately.
