🍅 Rustic Tomato Bread Slices with Egg Crumble

Ingredients
- 4 Scheiben Whole grain bread (sliced)
- 2 große Red tomatoes
- 1 kleine Garlic clove
- 2 EL Extra virgin olive oil
- 2 große Eggs (Size M)
- 1 Prise Salt
- 1 Prise Black pepper
Instructions
- 1. Toast the bread in a toaster or oven until golden brown and crispy.
- 2. Wash the tomatoes. Rub the tomato firmly with the cut side over the surface of the warm bread slices until juice and pulp adhere.
- 3. Cut the garlic clove in half and rub it lightly over the tomato bread for a mild aroma.
- 4. Whisk the eggs in a small bowl with a pinch of salt and pepper.
- 5. Heat a small frying pan over medium heat. Add a splash of oil and pour in the whisked eggs.
- 6. Stir the eggs continuously until they are set but still moist and soft (scrambled texture).
- 7. Remove the pan from the heat. Crumble the hot scrambled eggs directly onto the prepared bread slices.
- 8. Season with freshly ground pepper and serve immediately.
