  1. 1. Season the veal cutlets with salt and pepper on both sides.
  2. 2. Heat 2 tbsp of olive oil in a non-stick pan and fry the cutlets for about 3 minutes per side until golden brown. Remove them from the pan.
  3. 3. Add the cherry tomatoes to the same pan and fry them until soft and slightly burst.
  4. 4. Deglaze the pan with a little water and return the cutlets. Crack the eggs directly into the pan next to the tomatoes.
  5. 5. Cover the pan and cook the eggs until the whites are set but the yolks are still runny.
  6. 6. Season the dish with fresh basil and serve immediately.
