🍳 Pan-fried Veal with Fried Eggs and Tomatoes

Ingredients
- 4 Stück Veal Cutlets (dressed)
- 4 Stück Eggs (Size M)
- 250 g Cherry Tomatoes
- 1 Bund Fresh Basil
- 3 EL Olive Oil
- 1 Prise Salt
- 1 Prise Black Pepper
Instructions
- 1. Season the veal cutlets with salt and pepper on both sides.
- 2. Heat 2 tbsp of olive oil in a non-stick pan and fry the cutlets for about 3 minutes per side until golden brown. Remove them from the pan.
- 3. Add the cherry tomatoes to the same pan and fry them until soft and slightly burst.
- 4. Deglaze the pan with a little water and return the cutlets. Crack the eggs directly into the pan next to the tomatoes.
- 5. Cover the pan and cook the eggs until the whites are set but the yolks are still runny.
- 6. Season the dish with fresh basil and serve immediately.
