🍲 Rustic Tomato Leek and Lentil Stew

Ingredients
- 200 g Lentils (green/brown)
- 2 Stk Leek
- 2 Stk Carrots
- 1 Stk Onion
- 400 g Canned tomatoes (crushed)
- 2 EL Tomato paste
- 1 L Vegetable broth
- 1 Stk Red pepper
- 10 Blätter Fresh basil
- 40 ml Olive oil
- nach Bedarf Salt and pepper
Instructions
- 1. Rinse the lentils in a sieve under cold water.
- 2. Wash the leek thoroughly, slice it into rings, and dice the carrots and onion.
- 3. Heat the olive oil in a large pot. Sauté onions, leek, and carrots for 5 minutes.
- 4. Stir in the tomato paste and fry it for 1 minute.
- 5. Add the lentils, crushed tomatoes, vegetable broth, and diced red pepper.
- 6. Bring the mixture to a boil, then reduce heat and let the stew simmer uncovered for 25 minutes.
- 7. Season with salt and pepper to taste.
- 8. Scatter fresh basil over the stew and serve the dish warm.
