🥘 Rustic Spinach Tortilla with Garlic Bread

Ingredients
- 4 Stück Eggs
- 200 g Fresh spinach
- 2 Stück mittel Onions
- 30 ml Olive oil
- 50 g Breadcrumbs
- 2 Stück Garlic cloves
- 4 Scheiben Wheat bread (slices)
Instructions
- 1. Cut the onions into small cubes.
- 2. Heat 15 ml of olive oil in a non-stick pan and sauté the onions over medium heat for 5 minutes until translucent.
- 3. Add the spinach and cook it for 2 minutes until it has wilted. Remove the pan from the heat and let the mixture cool.
- 4. Whisk the eggs in a bowl with a pinch of salt and pepper and mix them with the cooled spinach-onion mix.
- 5. Pour the egg mixture back into the pan (with the remaining oil) and cook over low heat for 4 minutes until the bottom is set.
- 6. Invert the tortilla onto a large plate and slide it back into the pan to cook the other side for 3 minutes.
- 7. Rub the breadcrumbs with the pressed garlic. Toast the bread in the pan in a little oil until golden brown.
- 8. Cut the tortilla into cubes and serve it immediately with the garlic bread.
