🍲 Rustic Spinach-Orzo Pot

Ingredients
- 200 g Orzo pasta (rice-shaped pasta)
- 200 g Fresh spinach (young)
- 1 Stück Onions
- 2 Stück Garlic cloves
- 600 ml Vegetable broth
- 1 Stück Lemon (organic)
- 20 ml Olive oil (Extra Virgin)
- 2 g Chili flakes
- 5 g Salt
- 15 g Pine nuts (roasted)
Instructions
- 1. Finely chop the onion and press the garlic. Wash the spinach.
- 2. Heat the olive oil in a deep pot. Sauté the onion for 4 minutes and add the garlic and chili flakes for 1 minute.
- 3. Pour the vegetable broth into the pot and bring it to a boil.
- 4. Add the orzo pasta and cook it according to package instructions (usually 8-10 minutes) in the broth.
- 5. Stir the spinach into the pasta and cook for another 2 minutes until the spinach has wilted.
- 6. Squeeze the juice of half the lemon over the stew and season with salt.
- 7. Serve the stew with the roasted pine nuts and the remaining lemon half.
