🥣 Rustic Broccoli Stew with White Beans

Ingredients
- 400 g Broccoli
- 1 Stk Onion
- 2 Stk Carrots
- 2 Stk Celery Stalks
- 2 Zehen Garlic
- 1 Dose (400 g abgetropft) Canned White Beans (Cannellini)
- 500 ml Chicken or Vegetable Broth
- 2 EL Tomato Paste
- 3 EL Olive Oil
- 6 Stk Sage Leaves
- 1/2 TL Chili Flakes
- 1 TL Salt
Instructions
- 1. Wash the broccoli and divide it into small florets. Wash the carrots and celery stalks.
- 2. Dice the onion, carrots, and celery into fine cubes.
- 3. Mince the garlic finely.
- 4. Heat the olive oil in a pot and sauté the diced vegetable mix (Mirepoix) for 5 minutes.
- 5. Add the garlic, tomato paste, and chili flakes and stir for 1 minute.
- 6. Add the broccoli and broth. Let everything simmer for 10 minutes.
- 7. Add the drained white beans and sage leaves and cook for another 5 minutes.
- 8. Mash part of the beans in the pot with a spoon to thicken the sauce.
- 9. Season with salt and serve the dish warm.
