  2. 2. Wash and peel the potatoes, carrots and parsnips. Cut everything into equal-sized cubes.
  3. 3. Cut the onion into coarse pieces.
  4. 4. Put the vegetables in a large bowl. Add the olive oil, thyme, salt and pepper. Mix everything well.
  5. 5. Spread the vegetables on a baking sheet.
  6. 6. Bake the vegetables in the oven for 40 minutes. Turn the vegetables after 20 minutes.
  7. 7. Drizzle the vinegar over the hot vegetables before serving.
