🥘 Rustic Pisto

Ingredients
- 400 g Zucchini
- 400 g Eggplant
- 2 Stk Red pepper
- 2 Stk Onions
- 400 g Tomatoes (peeled, canned)
- 2 EL Tomato paste
- 3 EL Olive oil
- 1 TL Salt
- 1 TL Thyme (dried)
Instructions
- 1. Wash the vegetables. Chop onions, peppers, zucchini, and eggplant into coarse cubes (approx. 2 cm).
- 2. Heat the olive oil in a large pot. Sauté the onions and peppers for 5 minutes over medium heat.
- 3. Add the eggplant and zucchini. Fry for 5 minutes until the vegetables take on some color.
- 4. Add the tomatoes (with juice) and tomato paste. Stir well. Cover the pot and simmer for 20 minutes until the vegetables are very soft.
- 5. Season with salt and thyme. Taste and serve warm as a main dish.
