  1. 1. Wash the vegetables. Chop onions, peppers, zucchini, and eggplant into coarse cubes (approx. 2 cm).
  2. 2. Heat the olive oil in a large pot. Sauté the onions and peppers for 5 minutes over medium heat.
  3. 3. Add the eggplant and zucchini. Fry for 5 minutes until the vegetables take on some color.
  4. 4. Add the tomatoes (with juice) and tomato paste. Stir well. Cover the pot and simmer for 20 minutes until the vegetables are very soft.
  5. 5. Season with salt and thyme. Taste and serve warm as a main dish.
