  2. 2. Peel the onions and slice them into thin strips.
  3. 3. Melt butter in a large pan and caramelize the onions over medium heat for 20 minutes.
  4. 4. Add honey, balsamic vinegar, mustard, and lemon juice to the onion mixture and simmer for 2 minutes.
  5. 5. Season with salt, pepper, and fresh thyme. Let the mixture cool.
  6. 6. Roll out the puff pastry on a floured surface.
  7. 7. Place the dough in a tart pan and brush the edges with water to help it stick.
  8. 8. Fill the tart with the cooled onion mixture.
  9. 9. Bake the tart for 25-30 minutes until the pastry edge is golden brown.
