  1. 1. Wash the potatoes thoroughly. Boil them in salted water until just tender (approx. 12-15 minutes). They should still have a bite.
  2. 2. Drain the water and let the potatoes drip dry. Cut them into halves or quarters while warm.
  3. 3. Press the garlic clove through a press or crush it with a knife into a paste.
  4. 4. Wash the cilantro, shake off the water, and roughly chop the green leaves.
  5. 5. Mix together the olive oil, vinegar, garlic paste, smoked paprika, salt, and pepper in a small bowl.
  6. 6. Place the warm potato pieces in a large bowl. Add half of the dressing and half of the cilantro.
  7. 7. Gently toss the potatoes so they absorb the dressing.
  8. 8. Add the remaining dressing and cilantro. Toss one last time briefly.
  9. 9. Serve the salad lukewarm as a side dish or main course.
