🥗 Rustic Potato Olive Oil Salad with Coriander

Ingredients
- 500 g New Potatoes (waxy)
- 50 ml Good extra virgin olive oil
- 1 Bund Cilantro (coriander)
- 1 Stück Garlic clove
- 2 g Paprika powder (smoked)
- 15 ml Balsamic vinegar (or wine vinegar)
- 5 g Salt
- 1 g Black pepper
Instructions
- 1. Wash the potatoes thoroughly. Boil them in salted water until just tender (approx. 12-15 minutes). They should still have a bite.
- 2. Drain the water and let the potatoes drip dry. Cut them into halves or quarters while warm.
- 3. Press the garlic clove through a press or crush it with a knife into a paste.
- 4. Wash the cilantro, shake off the water, and roughly chop the green leaves.
- 5. Mix together the olive oil, vinegar, garlic paste, smoked paprika, salt, and pepper in a small bowl.
- 6. Place the warm potato pieces in a large bowl. Add half of the dressing and half of the cilantro.
- 7. Gently toss the potatoes so they absorb the dressing.
- 8. Add the remaining dressing and cilantro. Toss one last time briefly.
- 9. Serve the salad lukewarm as a side dish or main course.
