  1. 1. Rinse the beans and cook them (if dry) according to package instructions until tender. Reserve the cooking liquid.
  2. 2. Peel and dice the carrots and onions. Crush the garlic.
  3. 3. Heat the olive oil in a large pot and sauté the vegetables for 5 minutes.
  4. 4. Stir in the tomato paste and cook for 1 minute to deepen the color.
  5. 5. Add the cooked beans, vegetables, and broth to the pot.
  6. 6. Add the thyme sprigs and let the stew simmer gently for 20 minutes.
  7. 7. Remove the thyme sprigs. Mash some of the beans slightly with a spoon to thicken the stew.
  8. 8. Season the stew finally with salt and pepper.
  9. 9. Serve the stew hot in deep bowls.
