🍲 Northern French Bean Stew with Herbs

Ingredients
- 300 g Dried white beans (or pre-cooked)
- 150 g Carrots
- 150 g Onions
- 3 Stück Garlic cloves
- 20 g Tomato paste
- 600 ml Beef broth
- 30 ml Olive oil
- 4 Stück Fresh thyme sprigs
- 6 g Salt
- 3 g Pepper
Instructions
- 1. Rinse the beans and cook them (if dry) according to package instructions until tender. Reserve the cooking liquid.
- 2. Peel and dice the carrots and onions. Crush the garlic.
- 3. Heat the olive oil in a large pot and sauté the vegetables for 5 minutes.
- 4. Stir in the tomato paste and cook for 1 minute to deepen the color.
- 5. Add the cooked beans, vegetables, and broth to the pot.
- 6. Add the thyme sprigs and let the stew simmer gently for 20 minutes.
- 7. Remove the thyme sprigs. Mash some of the beans slightly with a spoon to thicken the stew.
- 8. Season the stew finally with salt and pepper.
- 9. Serve the stew hot in deep bowls.
