🥘 Peasant Stew with Potatoes and Leeks

Ingredients
- 500 g Potatoes (diced)
- 300 g Leek (sliced into rings)
- 200 g Carrots (sliced)
- 150 g Onion (diced)
- 30 ml Olive oil
- 800 ml Vegetable broth
- 20 g Tomato paste
- 6 g Salt
- 3 g Black pepper (ground)
- 10 g Fresh parsley (chopped)
Instructions
- 1. Heat the olive oil in a large pot over medium heat.
- 2. Sauté the onions, carrots, and leeks for 5 minutes until they soften.
- 3. Stir in the tomato paste and cook for 1 minute.
- 4. Add the diced potatoes and vegetable broth. Bring the mixture to a boil.
- 5. Reduce the heat to low, cover the pot, and let the stew simmer for 30 minutes until the potatoes are tender.
- 6. Season the stew with salt and pepper.
- 7. Sprinkle the fresh parsley over the finished stew and serve hot.
