  1. 1. Open the can of chickpeas and rinse them under cold water.
  2. 2. Finely chop the onion and peel the garlic. Mince the garlic.
  3. 3. Heat the olive oil in a large pot over medium heat.
  4. 4. Add the onions to the pot and sauté for 3 minutes until soft.
  5. 5. Add the garlic, cumin, and paprika powder. Stir for 1 minute until fragrant.
  6. 6. Add the drained chickpeas and chopped tomatoes (with juice) to the pot.
  7. 7. Pour in the vegetable broth. Bring the mixture to a boil.
  8. 8. Reduce the heat and let the stew simmer for 10 minutes.
  9. 9. Stir in the fresh spinach and let it wilt in the stew for 2 minutes.
  10. 10. Season with salt and serve the stew hot.
