🥘 Rustic Chickpea and Spinach Stew

Ingredients
- 400 g Chickpeas (can)
- 200 g Fresh spinach
- 1 Stk Onion
- 2 Stk Garlic cloves
- 400 g Tomatoes (can)
- 200 ml Vegetable broth
- 2 EL Olive oil
- 1 TL Ground cumin
- 1 TL Paprika powder (sweet)
- 1/2 TL Salt
Instructions
- 1. Open the can of chickpeas and rinse them under cold water.
- 2. Finely chop the onion and peel the garlic. Mince the garlic.
- 3. Heat the olive oil in a large pot over medium heat.
- 4. Add the onions to the pot and sauté for 3 minutes until soft.
- 5. Add the garlic, cumin, and paprika powder. Stir for 1 minute until fragrant.
- 6. Add the drained chickpeas and chopped tomatoes (with juice) to the pot.
- 7. Pour in the vegetable broth. Bring the mixture to a boil.
- 8. Reduce the heat and let the stew simmer for 10 minutes.
- 9. Stir in the fresh spinach and let it wilt in the stew for 2 minutes.
- 10. Season with salt and serve the stew hot.
