🍗 Rustic Chicken and Potato Casserole

Ingredients
- 4 Stk Chicken drumsticks
- 600 g Potatoes
- 1 Stk Onion
- 2 Stk Carrots
- 100 ml Dry white wine
- 300 ml Chicken broth
- 2 Zweige Rosemary
- 30 ml Olive oil
- 8 g Salt
- 3 g Black pepper
Instructions
- 1. Wash the potatoes and carrots and cut them into rough chunks. Dice the onion.
- 2. Rub the chicken drumsticks with oil, salt, and pepper. Fry them in a large frying pan until golden brown on all sides (approx. 3 minutes per side). Remove them and set aside.
- 3. Add the onions, carrots, and potatoes to the frying pan. Fry the vegetables for 5 minutes to give them some color.
- 4. Deglaze the vegetables with the white wine. Let the alcohol evaporate for 2 minutes. Add the chicken broth and rosemary sprigs.
- 5. Place the browned chicken drumsticks back into the pan. Cover the pan. Let the dish simmer over low heat for 25 minutes until the potatoes and chicken are cooked through.
- 6. Remove the rosemary sprigs. Taste the sauce and adjust seasoning if needed. Serve the chicken with the vegetables and sauce directly from the pan.
