🍲 Rustic Cherry Tomato and Bean Stew

Ingredients
- 500 g Cherry tomatoes
- 2 Stück Carrots
- 1 Stück Celery stalk
- 1 Stück Onions
- 2 Stück Garlic cloves
- 150 g Red cabbage (sliced thin)
- 200 ml Coconut milk (canned)
- 400 g White beans (canned)
- 2 EL Tomato paste
- 2 EL Olive oil
- 1 TL Paprika powder (sweet)
- 1 TL Salt
- 0.5 TL Pepper
Instructions
- 1. Wash the cherry tomatoes and halve them. Peel and dice the carrots and celery.
- 2. Finely chop the onion and garlic.
- 3. Heat the olive oil in a large pot over medium heat.
- 4. Fry the onion, carrots, and celery for 5 minutes.
- 5. Add the garlic and tomato paste and fry for 1 minute while stirring.
- 6. Add the cherry tomatoes and paprika powder and simmer for 5 minutes until the tomatoes are soft.
- 7. Pour in the coconut milk and drained beans.
- 8. Let the stew simmer for 10 minutes over low heat to allow the flavors to meld.
- 9. Season the stew with salt and pepper.
- 10. Serve the stew in deep bowls with fresh bread.
