  1. 1. Wash the cauliflower and divide it into small florets. Peel the onions and garlic cloves and chop them finely. Peel the apple and cut it into small cubes.
  2. 2. Heat the walnut oil in a large pot. Sweat the onions, garlic, and ginger (grated) for 3 minutes.
  3. 3. Add the cauliflower florets, apple cubes, and cumin. Fry everything for 2 minutes until fragrant.
  4. 4. Pour in the vegetable broth. Bring the soup to a boil, reduce the heat, and let it simmer for 20 minutes until the cauliflower is very soft.
  5. 5. Puree the soup until creamy smooth using a hand blender. Check the seasoning and adjust if necessary.
  6. 6. Crush half of the walnuts and stir them into the soup. Decorate the bowls with the remaining walnuts and a drop of walnut oil. Serve hot.
