🍲 Rustic Cauliflower Walnut Soup

Ingredients
- 800 g Cauliflower (head)
- 2 Stück Onions
- 3 Stück Garlic (cloves)
- 30 ml Walnut oil
- 1 Liter Vegetable broth
- 50 g Walnuts (roasted)
- 1 Stück Apple (tart, e.g., Boskoop)
- 20 g Ginger (fresh)
- 1 g Cumin (ground)
- 5 g Salt
Instructions
- 1. Wash the cauliflower and divide it into small florets. Peel the onions and garlic cloves and chop them finely. Peel the apple and cut it into small cubes.
- 2. Heat the walnut oil in a large pot. Sweat the onions, garlic, and ginger (grated) for 3 minutes.
- 3. Add the cauliflower florets, apple cubes, and cumin. Fry everything for 2 minutes until fragrant.
- 4. Pour in the vegetable broth. Bring the soup to a boil, reduce the heat, and let it simmer for 20 minutes until the cauliflower is very soft.
- 5. Puree the soup until creamy smooth using a hand blender. Check the seasoning and adjust if necessary.
- 6. Crush half of the walnuts and stir them into the soup. Decorate the bowls with the remaining walnuts and a drop of walnut oil. Serve hot.
