🥘 Rustic Cauliflower and Leek Stew with Smoked Tofu

Ingredients
- 500 g Cauliflower (head)
- 2 Stk Leeks (stems)
- 200 g Smoked tofu
- 2 Stk Carrots
- 400 g Tomatoes (can, whole)
- 300 ml Vegetable broth
- 10 g Paprika powder (sweet)
- 15 ml Rapeseed oil
- 5 g Salt
- 2 g Thyme (dried)
Instructions
- 1. Wash the cauliflower and cut it into small florets. Clean the leeks and slice them into rings. Peel the carrots and dice them. Cut the smoked tofu into small cubes.
- 2. Heat the rapeseed oil in a large pot. Add the leeks and carrots and sauté for 3 minutes until soft. Add the cauliflower and smoked tofu. Fry everything for 2 minutes while stirring.
- 3. Add the paprika powder and thyme. Stir until the spices are fragrant. Add the drained tomatoes (crushed by hand) and the vegetable broth. Bring the mixture to a boil.
- 4. Reduce the heat to low and let the stew simmer for 15 minutes until the cauliflower is tender. Season with salt and serve the stew directly from the pot.
