🥦 Rustic Cauliflower Chickpea Soup

Ingredients
- 500 g Cauliflower
- 1 Stück Onions
- 2 Stück Carrots
- 2 Stück Garlic cloves
- 200 g Chickpeas (canned, drained)
- 750 ml Vegetable broth
- 1 Dose Tomatoes (canned, 400 g)
- 30 ml Olive oil
- 10 g Paprika powder (sweet)
- 15 ml Lemon juice
Instructions
- 1. Wash the cauliflower and separate it into small florets. Dice the onions, carrots, and garlic finely.
- 2. Heat the olive oil in a large pot. Sauté the onions, carrots, and garlic for 4 minutes.
- 3. Add the cauliflower florets and the paprika powder and stir for 2 minutes.
- 4. Pour in the tomatoes and the vegetable broth. Let everything simmer for 15 minutes over medium heat until the cauliflower is soft.
- 5. Add the drained chickpeas and simmer them for another 5 minutes.
- 6. Puree the soup with an immersion blender until smooth. Stir in the lemon juice.
- 7. Serve the soup warm in deep bowls.
