🍲 Rustic Carrot Apricot Soup with Ginger

Ingredients
- 600 g Carrots (peeled and diced)
- 200 ml Coconut milk (can, no additives)
- 80 g Dried apricots
- 1 Stück Onion
- 20 g Ginger (fresh, grated)
- 700 ml Vegetable broth
- 15 ml Olive oil
- 15 ml Lemon juice
- 8 g Salt
- 3 g Cumin (ground)
Instructions
- 1. Dice the onion finely and sauté it in olive oil for 3 minutes until translucent.
- 2. Add the grated ginger and continue to stir for 1 minute until you smell the aroma.
- 3. Add the diced carrots, dried apricots, and ground cumin. Fry everything for 2 minutes.
- 4. Pour in the vegetable broth and coconut milk. Bring to a boil.
- 5. Let the soup simmer for 15 minutes until the carrots are soft.
- 6. Puree the soup completely using a hand blender.
- 7. Season with lemon juice, salt, and cumin to taste. Serve hot.
