  1. 1. Slice the red onion into very thin rings and place them in a bowl with ice water. Let them soak for 10 minutes.
  2. 2. Gently unroll the Ruggerino cheese balls from their leaf wrapping. Take a sharp knife and cut each ball into 4 equal pieces.
  3. 3. Add the sour cream, the juice of half a lemon, the olive oil, and the honey to a small bowl. Whisk the mixture until smooth.
  4. 4. Remove the onions from the ice water and pat them dry thoroughly with a kitchen towel.
  5. 5. Place the cheese pieces on a plate. Distribute the onions over them. Add a few fresh thyme leaves. Pour the sauce over everything and serve immediately.
