🧀 Ruggerino Antipasti with Lemon and Thyme

Ingredients
- 200 g Ruggerino Cheese
- 4 EL Sour Cream
- 1 Stk Lemon
- 4 Zweige Thyme
- 4 EL Olive Oil
- 100 g Red Onion
- 2 TL Chestnut Honey
Instructions
- 1. Slice the red onion into very thin rings and place them in a bowl with ice water. Let them soak for 10 minutes.
- 2. Gently unroll the Ruggerino cheese balls from their leaf wrapping. Take a sharp knife and cut each ball into 4 equal pieces.
- 3. Add the sour cream, the juice of half a lemon, the olive oil, and the honey to a small bowl. Whisk the mixture until smooth.
- 4. Remove the onions from the ice water and pat them dry thoroughly with a kitchen towel.
- 5. Place the cheese pieces on a plate. Distribute the onions over them. Add a few fresh thyme leaves. Pour the sauce over everything and serve immediately.
