  2. 2. Roll up the beef roulades and secure with kitchen twine.
  3. 3. In a large pot, sear the beef roulades on all sides until golden brown.
  4. 4. Add the red cabbage and diced apples and sauté briefly.
  5. 5. Deglaze with apple cider vinegar and pour in the beef broth.
  6. 6. Cover and let simmer for about 60 minutes on low heat.
  7. 7. After cooking, remove the beef roulades from the pot and let rest.
  8. 8. Serve the red cabbage as a side and slice the beef roulades.
