🍲 Roasted Red Pepper Gazpacho with Garlic Croutons

Ingredients
- 400 g Red peppers (roasted and peeled)
- 150 g Cucumber (peeled and deseeded)
- 1 kleine Red onion
- 50 g Gelatin-free croutons
- 250 ml Natural tomato juice
- 30 ml Medium oil blend (or olive oil)
- 15 ml Fresh lemon juice
- 3 g Salt
- 1 g Black pepper
Instructions
- 1. Cut the red onion and cucumber into large chunks.
- 2. Place all ingredients except the croutons into a blender.
- 3. Blend the soup for 2 minutes on the highest setting until completely smooth.
- 4. Season the soup with salt and pepper to taste.
- 5. Divide the soup into four cold bowls and garnish with the croutons.
