🍖 Ropa Vieja (Cuban Shredded Beef)

Ingredients
- 500g Beef (chuck)
- 1 Onion
- 1 Red Bell Pepper
- 3 Garlic Cloves
- 400g Canned Tomatoes
- 2 EL Olive Oil
- 1 TL Cumin
- 1 Bay Leaf
Instructions
- 1. Place the beef in a large pot, cover with water, and bring to a boil.
- 2. Reduce heat and simmer for 2-3 hours until the beef is tender.
- 3. Sauté onion, bell pepper, and garlic in olive oil.
- 4. Drain the cooked meat, shred it, and add to the vegetables.
- 5. Add the canned tomatoes and spices, mix well, and simmer for 30 minutes.
- 6. Serve with rice.
