🍲 Romäris Bean Stew

Ingredients
- 400 g White beans (canned)
- 1 groß Red bell pepper
- 1 groß Onion
- 1 mittelgroß Carrot
- 2 EL Tomato paste
- 500 ml Vegetable broth
- 1 Blatt Bay leaf
- 2 EL Olive oil
- 1 Bund Fresh parsley
Instructions
- 1. Dice the onion, bell pepper, and carrot into small cubes.
- 2. Heat the olive oil in a large pot over medium heat.
- 3. Sauté the vegetables for 5 minutes until soft.
- 4. Stir in the tomato paste and cook for 1 minute.
- 5. Add the drained beans, vegetable broth, and bay leaf.
- 6. Simmer the stew on low heat for 15 minutes.
- 7. Remove the bay leaf and garnish the stew with chopped parsley.
