🥔 Roasted Potato Salad Bowl with Chorizo

Ingredients
- 500 g Waxy potatoes
- 150 g Chorizo sausage (raw, smoked)
- 4 Stk. Eggs (Size M)
- 1 Stk. Red pepper
- 1 Stk. White onion
- 3 EL Olive oil
- 1 TL Cumin (ground)
- 1 EL Sherry vinegar
- 1 Bund Fresh parsley
- 1 Prise Salt and pepper
Instructions
- 1. Preheat the oven to 200 degrees Celsius.
- 2. Wash the potatoes and cut them into equal-sized cubes. Place them on a baking sheet.
- 3. Slice the chorizo sausage into thin slices and the red pepper into strips.
- 4. Place the potatoes, chorizo, and pepper on the tray. Coat everything with 2 tablespoons of olive oil, cumin, salt, and pepper.
- 5. Roast the mixture in the oven for 25 minutes until the potatoes are soft.
- 6. Boil the eggs in a pot of water for 9 minutes until hard. Peel them afterwards and cut them in half.
- 7. Dice the white onion finely and chop the parsley.
- 8. Mix the roasted mixture in a large bowl with the onion and parsley. Add the remaining olive oil and vinegar.
- 9. Let the bowl cool completely. Divide it into 4 storage containers. Top with the halved eggs.
