  1. 1. Preheat the oven to 200 degrees Celsius.
  2. 2. Wash the potatoes and cut them into equal-sized cubes. Place them on a baking sheet.
  3. 3. Slice the chorizo sausage into thin slices and the red pepper into strips.
  4. 4. Place the potatoes, chorizo, and pepper on the tray. Coat everything with 2 tablespoons of olive oil, cumin, salt, and pepper.
  5. 5. Roast the mixture in the oven for 25 minutes until the potatoes are soft.
  6. 6. Boil the eggs in a pot of water for 9 minutes until hard. Peel them afterwards and cut them in half.
  7. 7. Dice the white onion finely and chop the parsley.
  8. 8. Mix the roasted mixture in a large bowl with the onion and parsley. Add the remaining olive oil and vinegar.
  9. 9. Let the bowl cool completely. Divide it into 4 storage containers. Top with the halved eggs.
