🥔 Roasted Pepper Potato Bowl with Lentils

Ingredients
- 500 g Potatoes
- 2 Stk Red pepper
- 200 g Green lentils (dry)
- 200 g Cherry tomatoes
- 3 Zehen Garlic
- 40 ml Olive oil
- 5 g Cumin (ground)
- 5 g Paprika powder (smoked)
- 6 g Salt
- 10 g Fresh parsley
Instructions
- 1. Rinse the lentils and cook them in salted water until al dente (approx. 20 minutes). Rinse them and let them drain.
- 2. Wash the potatoes and cut them into bite-sized cubes. Wash the peppers and cut them into strips.
- 3. Mix the potatoes and peppers with half of the olive oil, garlic (pressed), cumin, smoked paprika powder, and salt.
- 4. Spread the vegetables on a baking sheet and bake them in the oven at 200°C for 25 minutes until crispy.
- 5. Halve the cherry tomatoes and chop the parsley finely.
- 6. Mix the cooked lentils with the roasted potatoes and peppers in a large bowl.
- 7. Add the cherry tomatoes and parsley. Drizzle the remaining olive oil over it and serve warm.
