  1. 1. Rinse the lentils and cook them in salted water until al dente (approx. 20 minutes). Rinse them and let them drain.
  2. 2. Wash the potatoes and cut them into bite-sized cubes. Wash the peppers and cut them into strips.
  3. 3. Mix the potatoes and peppers with half of the olive oil, garlic (pressed), cumin, smoked paprika powder, and salt.
  4. 4. Spread the vegetables on a baking sheet and bake them in the oven at 200°C for 25 minutes until crispy.
  5. 5. Halve the cherry tomatoes and chop the parsley finely.
  6. 6. Mix the cooked lentils with the roasted potatoes and peppers in a large bowl.
  7. 7. Add the cherry tomatoes and parsley. Drizzle the remaining olive oil over it and serve warm.
