  1. 1. Preheat the oven to 200 degrees Celsius. Cut the aubergines and peppers into large chunks. Cut onions in half and into strips.
  2. 2. Toss the vegetables in a bowl with olive oil, salt, and pepper.
  3. 3. Spread the vegetables on a baking sheet and roast for 20 minutes until soft and slightly caramelized.
  4. 4. Mix the roasted vegetables in a heatproof pan or baking dish with the tomato paste. Check seasoning.
  5. 5. Spread the grated Gouda evenly over the vegetables.
  6. 6. Bake the gratin for another 10 minutes until the cheese is melted and bubbling.
  7. 7. Garnish the dish with fresh basil leaves and serve directly from the dish.
