🍆 Roasted Pepper Onion Aubergine Gratin

Ingredients
- 2 Stück Aubergines
- 2 Stück Red bell peppers
- 2 Stück Onions
- 100 g Gouda (grated)
- 2 EL Tomato paste
- 3 EL Olive oil
- 10 Stück Fresh basil leaves
- 1 g Salt and pepper
Instructions
- 1. Preheat the oven to 200 degrees Celsius. Cut the aubergines and peppers into large chunks. Cut onions in half and into strips.
- 2. Toss the vegetables in a bowl with olive oil, salt, and pepper.
- 3. Spread the vegetables on a baking sheet and roast for 20 minutes until soft and slightly caramelized.
- 4. Mix the roasted vegetables in a heatproof pan or baking dish with the tomato paste. Check seasoning.
- 5. Spread the grated Gouda evenly over the vegetables.
- 6. Bake the gratin for another 10 minutes until the cheese is melted and bubbling.
- 7. Garnish the dish with fresh basil leaves and serve directly from the dish.
