  1. 1. Preheat the oven to 200 degrees Celsius top and bottom heat.
  2. 2. Mix the eggs, salt, and pepper in a bowl and beat them lightly.
  3. 3. Heat 15 ml of olive oil in an oven-safe pan (or baking dish) and sauté the diced peppers for 5 minutes.
  4. 4. Pour the egg mixture over the peppers. Cook the frittata over medium heat for 2 minutes until the edges start to set.
  5. 5. Distribute the goat cheese evenly on the surface.
  6. 6. Place the pan in the oven and bake the frittata for 10 to 12 minutes until it is puffed and golden brown.
  7. 7. Take the frittata out of the oven and place the arugula on top. Let it rest for 2 minutes.
  8. 8. Drizzle the remaining olive oil and balsamic glaze over the frittata and cut it into four pieces.
