🍳 Roasted Pepper and Goat Cheese Frittata

Ingredients
- 4 Stück Eggs
- 150 g Fresh soft goat cheese
- 150 g Red bell pepper, deseeded and diced
- 40 g Arugula
- 30 ml Olive oil
- 4 g Salt
- 2 g Black pepper
- 15 ml Balsamic glaze
Instructions
- 1. Preheat the oven to 200 degrees Celsius top and bottom heat.
- 2. Mix the eggs, salt, and pepper in a bowl and beat them lightly.
- 3. Heat 15 ml of olive oil in an oven-safe pan (or baking dish) and sauté the diced peppers for 5 minutes.
- 4. Pour the egg mixture over the peppers. Cook the frittata over medium heat for 2 minutes until the edges start to set.
- 5. Distribute the goat cheese evenly on the surface.
- 6. Place the pan in the oven and bake the frittata for 10 to 12 minutes until it is puffed and golden brown.
- 7. Take the frittata out of the oven and place the arugula on top. Let it rest for 2 minutes.
- 8. Drizzle the remaining olive oil and balsamic glaze over the frittata and cut it into four pieces.
