🍑 Roasted Peach Rucola Salad with Honey-Mustard Dressing

Ingredients
- 150 g Fresh arugula
- 2 Stück Ripe peaches (sliced)
- 100 g Goat cheese cream (or cream cheese)
- 30 g Walnuts (roasted and chopped)
- 2 EL Olive oil
- 1 EL Honey
- 1 TL Dijon mustard
- 1 EL Apple cider vinegar
- 1 Prise Salt and black pepper
Instructions
- 1. Preheat the oven to 200 degrees. Line a baking tray with baking paper.
- 2. Whisk the olive oil, honey, mustard, apple cider vinegar, salt, and pepper in a small bowl until smooth.
- 3. Brush the peach slices with half of the dressing and place them on the baking tray. Roast the peaches for 10 minutes.
- 4. Take the tray out and distribute the arugula on large plates. Place dollops of goat cheese cream onto the salad.
- 5. Add the warm peaches and the roasted walnuts. Drizzle the remaining dressing over it and serve immediately.
