  2. 2. Wash the peaches, cut them in half lengthwise, and remove the stone.
  3. 3. Place the peach halves cut-side up in a baking dish.
  4. 4. Mix the honey with the lemon juice and spoon one teaspoon into each peach cavity.
  5. 5. Bake the peaches for 15 minutes in the oven until they are soft.
  6. 6. Meanwhile, whisk the mascarpone with the vanilla extract in a small bowl.
  7. 7. Remove the peaches from the oven and place a large spoonful of mascarpone cream into each peach half.
  8. 8. Garnish with fresh mint leaves and serve warm.
